Skill Need In The Pishmaniye Industry: Determining The Skill Needs Of Workers Working In The Pishmaniye Factory

This study examines the historical development and production processes of the local dessert of Kocaeli, Pişmaniye. Sectoral development and especially the need for labor skills have been analyzed. The effect of the transition of Pişmaniye from traditional production methods to industrial production on the quality of the labor force in the sector and the labor skill gap have been revealed. The supply of qualified labor force and the skill gap in the labor market are gaining importance as increasing problems in the Pişmaniye sector as in different sectors. The research was conducted in the “Buşah Pişmaniye” enterprise operating in İzmit. The research model was created as an exploratory one. Qualitative research methods were used in the research and a semi-structured interview form was used as the data collection tool. The research was conducted on 38 employees in the enterprise. Face-to-face interviews lasting 30 minutes were conducted with each employee. The following findings were obtained in the research; Pişmaniye production is a traditional craft that requires manual labor and mastery. The education and skill level of the labor force is low. There is a lack of qualified labor force and insufficient skills in the sector. There are relatively low wages and difficult working conditions. The perception of profession and professionalization of employees is low. The results of the study offer the following suggestions for the sustainability and competitiveness of the phyllo pastry sector: Integrating developing technology into the production process along with traditional production methods. Investing in R&D activities to develop new products that meet consumer demands. Consumer preferences are diversifying from traditional phyllo pastry varieties to gluten-free and differently flavored products. In this context, research on consumer preferences is needed. Strengthening the promotion of the sector and increasing export potential. For the development of the sector, vocational training programs need to be published, R&D investments need to be increased and promotional activities need to be strengthened. Developing innovative methods in vocational training, implementing the learning outcomes approach and quality assurance. Implementing new working models for changing technology and working conditions.
